The Aji Verde is a traditional Capsicum baccatum from the heart of Peru - often picked and used when the peppers are bright green, as the name suggests (verde). This variety has long, slender fruits that slowly color from green to yellow, orange and eventually red, with a crisp texture and distinct, fresh flavor.

Pungency: mild to medium - approx. 1,000-8,000 SHU, depending on maturation stage
Plant: Compact, productive and easy to grow. Height up to 50-90 cm, suitable for pot and full soil

Seeding: February-March indoors at 22-26°C, transplant after the last frost
Growth habit: slender fruits hang down from well-branched plants
Harvest: Plant production for several months; overwinterable in pots.
🍴 Culinary tip
Aji Verde is the pepper for an authentic Peruvian green salsa (aji verde). Processed raw in ceviche, marinades or as a fresh sauce - it provides a light, citrusy kick without excessive heat.
